We Choose Foods by Their Health Benefits

Humans may choose foods based on their specific micronutrient content, rather than starch content, as previously thought, research suggests. In a small study of 128 adults in which participants’ preference of images of different fruit and vegetable pairings was measured, researchers found that participants preferred certain food combinations more than others. These combinations appear to be predicted by the amounts of micronutrients in the pairings and whether the combination of foods provided a balance of different micronutrients. The most popular combinations increased exposure to micronutrients.
